LUNCH SPECIAL: PASTA
PROS: Spaghetti and meatballs is a classic, and it’s usually served with beef meatballs and tomato sauce. Using whole-wheat pasta is a must — kids won’t tell the difference when their noodles are swimming in tomato sauce which, Reza says, counts toward their daily servings of vegetables. “Serve each child about one or 1½ cups of cooked spaghetti. That gives them two to three of their daily grain servings,” she says. “A quarter of the plate should be meatballs.” Ask for chicken or turkey balls (instead of beef) for something different but equally delicious.
CONS: Too much pasta can leave kids feeling sluggish in the afternoon, so it’s important to get the right serving size.
IMPACT: “Meatballs have vitamin B12, which helps with brain function,” Reza says. The B12 boosts concentration and helps to combat fatigue, which keeps kids sharp.
